Fashionable Food: Keto Friendly Buffalo Chicken

This Ramadan I had some free time on my hands so I decided to get into cooking, given that we are also trying to eat low carb, it made sense that I start experimenting. I started sharing some basic recipes on Instagram and got a great response, so I thought I would also share them here with a bit more detail.

The first recipe I’m posting here is  a creamy buffalo chicken casserole that I saw on Ruled.Me and made my own. It’s a great option when you’re craving something rich with a little kick.

Now, my issue is that I never measure anything with precision, I kinda wing it – so bear with me.

  • 8 Chicken Thighs, de-boned
  • Jalapeños
  • Cream Cheese (200 grams)
  • Mayo
  • Hot Sauce/ Buffalo Sauce
  • Heavy Cream/Cooking Cream
  • Seasoning (explained below)

 Season your de-boned chicken with lemon juice, taco seasoning (I use the powder), cumin, garlic powder, olive oil and a pinch of salt. Leave it overnight, ideally, or about 3 hours if you don’t have time.

Place the chicken on a roasting pan and bake for 20 mins on 200 Celsius. This is a new technique for me (I’m still new to cooking OKAY) I usually just bake in a glass dish but this was so much quicker and the chicken cooked beautifully.

While the chicken bakes, chop up a jalapeño and cook in a teensy bit of butter until it gets soft. This is where your personal preference comes in, I don’t do too much spice, so I used half a jalapeño and saved the other half for garnish. You can do a whole jalapeño if you can take the heat.

Once the jalapeños are soft, add 200 grams of cream cheese (this is the smaller Philadelphia pack), about 5 tablespoons of Mayo, hot sauce (to taste, I used 2-3 spoons), and a dash of heavy cream. Mix all of these together well.

Your mixture should look like this – keep adding heavy cream until you reach a consistency that is not TOO thick. It should also be a little more orange than this, but again, I didn’t use a lot of hot sauce.

Place your chicken into a casserole dish, you’re going to cover it with the cream cheese mixture now.

TA-DA!

Low carb buffalo chicken casserole

Add a [generous haha] amount of cheddar and mozzarella with some jalapeños to garnish. Pop this mofo in the oven for around 10 mins, until the cheese is melted.

So this is not the same casserole, it’s the one I made the week before. We were so hungry at Iftar that we just started eating it without taking a picture. Oops.
